Potato Bean Mexi Mess

Ingredients
  • BEAN MIX
  • 400 g can of red kidney beans
  • 400 g can of tomatoes
  • 1 x Taco seasoning sachet whatever you can find
  • 1 x diced onion
  • 1 tbsp olive oil
  • SALSA
  • 1 red capsicum diced
  • 1/2 cucumber diced
  • 1/2 cup of corn
  • GUAC
  • 1 x Avocado
  • Juice of 1/2 a lemon
  • Pinch of Salt
  • POTATOES
  • 5 x Potatoes medium size, cubed
Instructions
  1. POTATOES
  2. Pre heat your oven to 200C and place the cubed potatoes in. Leave for 20 mins, check and ensure they are cooked through.
  3. BEAN MIX
  4. Start with with your Onion & Capsicum in a pan, with a dash of olive oil. Cook for 5 mins on medium or until onion is translucent.
  5. Add the remaining ingredients and simmer for 10 mins, stirring regularly.
  6. SALSA
  7. Dice all ingredients and combine in a bowl. Ready to top your bean mix.
  8. GUAC
  9. Mash the avocado and mix in the lemon and salt.
  10. When all sections are complete, combine on your plate.
