This simple Buddha Bowl is one that you can make when you forgot your lunch but there is a market or grocery store nearby. It has simple ingredients which you can get anywhere and shouldn’t cost very much. It will also give you a few serves so you don’t have to bring in lunch the next day, you can have another bowl.
- A heap of Spinach leaves
- 1 can of Corn
- 1 can of lentils
- 1 Avocado
- 1 container of Hummus
- 1 carrot
Drain the can of corn and can of lentils.
Slice your avocado in half.
Start with the spinach and cover the bottom and side.
Pour in half the can of corn and half the can of lentils.
Slice up the carrot to the desired slicing.
Place your avocado on the side and put a tablespoon of hummus in the middle.
It's not pretty but its quick, easy and very nutritious.
