Vegan Cabbage Salad with Marinated Tofu

This vegan cabbage salad is fresh, crispy and healthy. Make it for lunch or take it to your friends BBQ, everyone will love it

 

Vegan Cabbage Salad with Marinated Tofu

Ingredients

  • SALAD
  • 1 Lebanese cucumber (thinly sliced)
  • 1 large carrot (thinly sliced)
  • 1/2 small red cabbage (thinly sliced)
  • 200g Tofu - Marinade with Teriyaki Sauce (15 mins or Overnight)
  • 4 spring onions (sliced)
  • 120g cherry tomatoes (halved)
  • 1/2 cup fresh mint leaves (roughly chopped)
  • 1/2 cup fresh coriander (roughly chopped)
  • DRESSING
  • 2 tsp caster sugar
  • 1/3 cup (80ml) rice vinegar
  • 1 tablespoon tamari
  • 1/2 teaspoon sesame oil

Instructions

Dice up your Tofu in 2cm cubes and Marinade in the Teriyaki Sauce (15 mins or Overnight)

Place the tamari, rice wine vinegar and caster sugar in a small pot and heat on medium until the sugar dissolves and starts to thicken to a syrup.

Take off the heat and add the sesame oil, then set aside.

Chop and slice all your vegetables and combine in a large bowl.

Fry off your tofu until slightly crispy on two sides.

Combine all ingredients into a bowl and cover with dressing.

Serve.
