This Vegan Yellow Curry is just something we kind of made up. All be it, I have had some yellow curries before. So you get a feel for what the right ingredients are that you need to put in. So with that in mind I grabbed a heap of ingredients and just gave it a crack.
This is the part where a recipe comes in handy because I forgot a few ingredients until late in the cooking process. That’s ok for all of you because it means you get to follow this and not repeat my mistakes. Not that mistakes are bad, because you learn from them and it turned out really well in the end anyway.
So the moral of this story is to follow the recipe and not to follow my mistakes 😛
Also to note that this Vegan Yellow Curry mixes Thai style curry with some non-traditional ingredients to a Thai Yellow Curry. But it totally works.

Vegan Yellow CurryPrint Recipe
- 3 Tbsp Thai Yellow Curry Paste
- 1 can Coconut Cream or Milk
- 2 1/2 cups of vegetable stock
- 2 cups of basmati rice
- 1 Tbsp black mustard seeds
- 3 kaffir lime leaves
- 1 cup of yellow lentils
- 3 potatoes
- 1 can chickpeas
- 1 brown onion
- 1 large clove of garlic
First off, you need to put on a pot of water with the lid on and bring to boil.
While that is starting to boil, you want to cut up your potatoes into 2cm by 2cm cubes.
Place into the pot of boiling water with the lid on for 12-15 mins or until starting to get soft.
Put your rice on now too.
Dice your brown onion and crush your garlic.
Place the onion, garlic into a deepish pan or pot and saute for 2 mins.
Add the curry paste, mustard seeds and fry til the mustard seeds start popping.
Add the coconut cream, chickpeas, yellow lentils and stock to the pot/pan.
By this time the potatoes should be done. Drain and add to the curry.
Leave this on a medium/high heat for 10 mins, stirring every few minutes. Be careful because it sticks to the pot/pan.
Rip up the lime leaves and add to the curry.
When the yellow lentils are cooked you are ready to eat. It should take about 15 mins from when you put the lentils in to when its ready.
Make sure you watch it and make sure it doesn't stick to the pan.
