Roasted Cauliflower

We cooked this roasted cauliflower recently for a Christmas party we were invited to cater for Venue Insider.  You can get the full feast in our vegan Christmas eBook.  But this roasted cauliflower was the stand out for me.   It’s simple to prepare and once it starts cooking in the oven and you care for it over the 45 mins, you will be in love with it also.

It falls apart in your mouth when you start to eat, with such beautiful flavours that have been absorbed by the cauliflower over the cooking time.  It’s definitely worth trying this recipe.

I would go as far as saying its one of my favourite dishes that I have cooked in my time as an amateur cooking person hahaha.

Roasted Cauliflower

Serves: 6-8 serves Cooking Time: 50 mins

Ingredients

  • 1 large cauliflower
  • 1 red onion, cut into quarters
  • 3 sprigs of rosemary, for garnish
  • topping
  • 4 garlic cloves, minced
  • 2 shallots, chopped
  • 2 tbsp nut butter
  • 1 tsp nutmeg
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp rosemary, chopped
  • ¾ cup tamari
  • ¼ cup maple syrup
  • 2 tbsp vegan worcestershire
  • ¼ cup vegetable stock

Instructions

Preheat oven to 180 degrees C

Trim the cauliflower down to just the head. Turn it over so you can trim from the bottom and remove most of the stem without cutting too deep into the cauliflower. You want to keep it in one piece.

Cut up your onion into quarters to place around the Cauliflower when roasting.

For the topping, you just want to put all of the ingredients into a jar or bowl and mix. The butter won’t mix too well but once it starts baking it will. Close the jar and shake to mix it up.

Place your cauliflower into a small roasting tray and place the onions around it. You are now going to pour the topping over the top and throw it in the oven.

Total cooking time will be about 45 mins, but you want to open up the oven and take the cauliflower out every 10 mins.

Take a spoon or other device to get the liquid from the bottom and place back over the top of the cauliflower. Just like giving it a bath.

Repeat until done.
