Artichoke & Spinach Creamy Dip

Ingredients

  • The Dip Part:
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 jar of marinated artichoke, chopped
  • 2 cups of fresh spinach, chopped
  • Sat & Pepper to taste
  • Creamy Sauce
  • 1/4 Cup cashews
  • 1 sup of Almond Milk
  • 1 tsp of Apple cider vinegar
  • 2 tbsp of Corn Flour
  • 1 tsp olive oil
  • 2 tbsp nutritional yeast
  • A pinch of Paprika
  • Salt

Instructions

Preheat oven to 180C

In a small saucepan, heat up the artichoke, garlic, spinach and olive oil for 2-3 minutes.

Transfer this to your baking dish, a medium sized oven proof dish.

Place all the Creamy sauce ingredients into a blender and blend until smooth.

Pour mixture into the empty small sauce pan and heat until the mixture starts to thicken.

Transfer into dish with the artichoke and place in the oven.

Bake for 15-20 minutes or until dip is bubbly.

Take out and eat either hot or cold.
