2 Ingredient Banana Coconut Cookies

2 ingredient vegan & gluten free banana coconut cookies

These 2 ingredient banana coconut cookies are as simple as they sound. I found a recipe online last week when I was looking for things to use out 15kg of bananas with. Too good not to share!

The Cookies will literally only take you 30 mins all together with cooking and preparing. They are an easy breakfast snack and great to take to work for your mid-morning hunger attack.

Coconut and banana are such great flavours together. I am not a huge fan of coconut on its own, but these two together are like two sweet peas in a pod. AND you don’t have to worry about them adding to your waistline during your new years’ resolution to get fit.

I used a round container to shape my cookies on the tray. You could use whatever you like, but if your cookie cutters are too small it is hard to get them to come out the bottom. (I tried some cute stars but it was a bit too sticky).

Serves: Approx 6 Cooking Time: 25 mins

Ingredients

  • 1 cup banana
  • 1 cup shredded coconut

Instructions

Preheat your oven to 180°

Line a tray with baking paper

Mix the ingredients in a blender or mixer

Shape your cookies on the tray

Bake for 25 minutes or until golden brown.

Notes

Optional cinnamon, dried fruits or choc chips
