Unicorn Toast – The Vegan version

That’s right everyone.  Unicorn toast is a thing but this is the vegan version.  At it’s simplest, unicorn toast is an alternative to fairy bread.  Except this unicorn toast is good for you.  That’s right….its good for you.

Now you can eat that pretty colourful bread at kids parties and not feel guilty.

It actually really simple to make too.  Base is just an easy vegan cashew cream and then the fun part.  Mixing in different ingredients to get those amazing colours.  There are a few different posts out there that use different types of powders, and I am totally on board with all of that.  But sometimes you just want the real deal….right?  With all the beautiful berries out there you can definitely use anything to change the colour of your cashew cream.

For our colours we used whole blueberries, which gave it a sweet taste.  We also used strawberries, turmeric root and then some kale powder because I tried but couldn’t juice a kale.  There is also other options like Matcha powder or you can use Golden Grinds turmeric root also for the colours.

We also did our recipe slightly different because we used flaxseed power crackers as our base for the spread.  Courtesy of Katie’s Essentials who has a very simple and very tasty power cracker mix.  I really like the cracker option for those times that you just want some colourful dip also.  You can break it all up and just dip into your arrangement of colourful cashew cream dips.

The sky is the limit, or if you are a true unicorn, you have no limit!

Unicorn Toast - The Vegan Version

Print Recipe
Serves: 8-10 slices Cooking Time: 15 mins


  • 200g of natural cashews
  • 1-2 Tbsp of nutritional yeast
  • 1-2 Tbsp of water
  • 6-7 Blueberries
  • 2-3 Strawberries
  • 1 tsp Kale Powder
  • 1 tsp Turmeric Root or Powder



Soak your cashews in water for at least 4 hours


Place the cashews, nutritional yeast and water into a food processor and mix until smooth. Add extra water if necessary to get a smooth paste.


Split your cashew cream into even amounts for each colour.


Add each separate mix into the processor with each individual colour. So blueberries for blue, then remove and add Kale powder for green, remove and repeat.


Repeat for each colour.


Spread on your toast or cracker and enjoy.


You can obviously use anything as your base for this. The sky is the limit, or if you are a real unicorn, you have no limits.
