Blueberry pie is a classic dessert that everyone needs to try at least once in their life. So why not start with this one. This Blueberry Pie is a little out of the ordinary but it packs a big punch and is absolutely f#*king delicious.
The beauty of this pie is that you do not have to be perfect, you roll out some simple pastry, throw some blueberry mix in the middle and fold it up. Stick it in the oven and you are basically done.
Most recipes will pop some cream over the top, but this blueberry pie is topped with a very simple vanilla banana nice-cream.

Blueberry, Walnut & Thyme Open Pie
Blueberry pie is a classic dessert that everyone needs to try at least once in their life. So why not start with this one.
- 1 1/2 cups Gluten Free Plain Flour
- 1 tbsp Icing Sugar
- 150 grams Nuttlex or Vegan Butter
- 25 grams Lemon Thyme Finely Chopped
- 375 grams Blueberries
- 1 cup Icing Sugar
- 1 tbsp Cornflour
- 1/2 cup Walnuts
- 1/2 Lemon (Juiced)
Vanilla Banana Nicecream
- 3 frozen Bananas
- 1 tsp Vanilla Essence
Pre Heat your oven to 180C
Mix all your pie crust ingredients together with your finger tips. Make sure you do not work it too much as your want the pastry to remain reasonably light. Once fully combined, set aside for 10 mins to rest.
Place all the blueberry mix into a bowl and mix together.
Roll out your pastry and place onto a flat tray or into a pie dish. You want your pastry to be approx 30cm wide (round).
Spoon out your blueberry mix onto the pastry and then fold up the side around your blueberry mix
Place in the oven for 40 mins, check at halfway mark to see how the crust is going.
While your pie cooks, grab 3 frozen bananas and your vanilla essence and blend in your blender until smooth.
When your pie comes out, let it cool for 10 mins, cut and serve with your Nicecream.
