Bayano the Rebel

Paying homage to the feats of the slave rebellion led by Bayano of Panama against the Spanish conquest in the 16th Century. Bayano the Rebel stares in the face of social injustice and shakes an iron fist at corrupt coffee mafia. They are an ethical coffee shop standing up for the rights of coffee farmers by supporting sustainable farming practices. Hidden down a side street off chapel in South Yarra, they provide alchemical coffee paired with heartwarming and soul-nourishing vegan snacks.

This is the new business venture from Zak Openstein & Marwin Shaw; supported by the incredibly talented Chefs Norm Bellis & Andy Blyth. They are no strangers to the game and are well known for Monk Bodhi Dharma and Admiral Cheng Ho.

Upon arrival, you are welcomed by the friendly and chatty barista, whom ought to be desired by every local coffee shop for his skill in creating an inclusive and social atmosphere. The space is a small and intimate den, which encourages interaction amongst fellow strangers. The interior continues the theme of sustainability with an industrial edge, using recycled copper piped stools and featuring a blue wall made from roughly oxidised copper.

The Coffee

Attention all ethical coffee enthusiasts!!! This place is definitely for all you coffee romantics seeking delicate flavours, which are served with respect and dignity to the farmers. They build close relationships with sustainable coffee farms and have even invested into infrastructure for the community such as building a school, providing access to water and reforesting the land. They further plant numerous other plants within the coffee plantation to create a more diverse and sustainable ecosystem, which further adds layers of dimensions to the flavour of the beans.

There is a wide range of coffee beans on offer, which are served in every way possible (I mean every way possible) from all around Africa and Central America such as the likes of Panama, Columbia, Brazil, Ethiopia & Kenya. The coffee here is honestly the best coffee I have ever tried in Melbourne! They also offer plant-based milks such as soy or check out their housemade macadamia milk!

The Food

Bayano offers a selection of solely vegan snacks including plenty, which are gluten-free. The inspiration behind the menu is to provide simple, unpretentious and comfort food, which compliment the flavours in the coffee beans. This is not really the place to go to if you are craving a large meal. Our favourites would definitely be the gluten free banana bread served with sweet potato jam & coffee maple syrup and the smokey bbq cauliflower toastie. Also for sweet tooths definitely try the chewy chocolate brownie!
