After 7 solid months of renovations, The Carringbush Hotel, or ‘The Bush” to locals, has reopened their doors. The complete transformation throughout the pub opens it to the abundance of space while paying homage to the original decor through subtle elements.
The old bar heading remains intact, though cut off from each end to allow passage from the bar into other areas of the pub. The new wood finish on the bar top is replicated on the tables throughout the venue.
The owners, Liam Matthews, Joel Morrison and Singa Unlayati, from The Old Bar in Fitzroy have taken the pub in a new direction. Together with the former GM of The Old Bar, Jen Drane, The Carringbush Hotel is placing emphasis on a family friendly environment, their vision is to be a meeting place for the surrounding community, the way pubs used to be, back in the day.
With a completely new kitchen, bar and interior, The Carrignbush Hotel can set new procedures from scratch. The aim is to be as sustainable as possible in its practices. From bringing in wine on tap from Noisy Ritual Urban Winery to reducing the plastics in deliveries to the Kitchen.
The new menu, designed and developed by Head Chef, Roxanne Olsen, formerly of Stomping Ground, is completely Vegetarian and Vegan. Looking to reduce the number of fake meats in pub food, but still offer hearty meals that use vegetables to their maximum potential. You can expect to find traditional pub food, like burgers, fries. The kitchen is expected to open mid-January, but be sure to check their Facebook page for updates.
The Carringbush Hotel offers an all vegan range of 21 beers on tap, 6 different varieties of wine and one Kombucha on tap. You can also spice up your kombucha with a dash of spirits if you are feeling up for it.
Head down for a beer, or a glass of wine and check out the new digs, it’s going to be a popular drinking and eating hole this year.
