Cornerstone & Co, located in the suburban streets of Hampton East, was opened by Leigh and his wife in April 2017. They took over the café from previous owners who had been occupying the space for five years. The café is Japanese and Italian inspired.
Leigh is aware of the demand for vegan options in the area and always incorporates four to five vegan options in his seasonal menus (which change every three months at Cornerstone & Co). Although not vegan himself, Leigh enjoys many wholesome plant-based meals each week.
The café boasts a contemporary atmosphere with white tiles, white slim wire chairs, and recycled timber tables and shelving.
Leigh values the highest quality produce and coffee and this is evident on their menu. The nourish bowl is a wholesome mix of fresh vegetables and leaves you feeling full and satisfied. Including snow peas, avocado, purple carrot, and walnuts, it is drizzled with a zesty lemon juice and Yarra Valley olive oil.
One of their most popular vegan options is the Japanese macro set. With edamame and bean curd season brown rice, shirataki glass noodles, avocado wakame, and tofu dengaku, it is a plant-based crowd-pleaser.
Cornerstone & Co also offer an authentic Japanese take on porridge – polenta and almond porridge. Topped with rhubarb compote, amaguri roasted chestnuts, and berries, it is also another favourite on the menu.
