In a recent episode of Two Guys One Plant, we discussed some great pairings with a carrot. It turns out orange is one of those pairings. At first, it may seem like an unlikely pairing, even crazy. But these two flavours pair perfectly to create a decadent carrot cake with a beautiful citrus frosting that will make you smile for days.

Vegan & GF Carrot Cake with Orange Buttercream
- 2 cups Plain Gluten-Free Flour
- 2 tsp Bicarbonate Soda
- 1/2 tsp Salt
- 3/4 cup Vegetable Oil
- 1 cup Brown Sugar
- 1 tsp Vanilla Extract
- 1 tsp Cinnamon
- 2 Bananas Mashed
- 6 medium Carrots Grated
- 1/2 cup Pecans
- 25 ml Orange Juice
- 1 cup Nuttlex Buttery
- 3 1/2 cups Icing Sugar
- 200g Vegan Cream Cheese
Pre-heat your oven to 180C
Prepare your ingredients by mashing your bananas, grating the carrot.
Place all the ingredients EXCEPT the pecans into a mixing bowl and combine.
Mix until you get the same consistency throughout the batter, then pour into a circular cake tin. We used a 21cm Cake tin.
Place in the oven for 35 mins. To check the cake, insert a toothpick or small knife into the cake. It should come back out clean. Then leave to cool for at least 20 mins before frosting.
Combine the icing sugar and butter in a mixing bowl. Use a handheld mixer to combine.
Once combined, add the cream cheese to the mixture and softly incorporate with a spatula.
Slowly add the orange juice to the mixture and continue to combine.
Once it is thick, spread it evenly over your cooled cake.
Sprinkle with pecans and serve.
