I have made several vegan chocolate lava cakes before and I have to say using this truffle filling was by far the most simple and guaranteed to work cake I’ve ever made.
Sometimes chocolate can melt at different rates, so it can be hard to get it right.

Mini chocolate lava cakes
- 1 cup oats
- 1/2 cup shredded coconut
- 4 tablespoons cacao powder
- 1/3 cup coconut sugar or regular is fine
- 1 teaspoon baking powder
- Pinch of salt
- Wet ingredients
- 2/3 cup plant based milk
- 1 tablespoon apple cider vinegar
- 1/3 cup Apple sauce or purée
- 1/4 tsp instant coffee granules
- 100 ml Go Vegan Desserts chocolate truffle frozen
Add dry ingredients to a food processor and pulse until the oats and coconut are well broken up and you have almost a flour-like consistency.
Add wet ingredients into a small bowl and whisk to combine.
Gently fold the wet ingredients into the dry ingredients and stir until you have a smooth batter, no lumps.
Pour the batter between 4 ramekins and full until 2/3 full.
Divide the go vegan dessert into 4 portions while still frozen and place into the centre of each ramekin. You don’t need to insert it as it will sink during cooking time.
Place ramekins in a preheated gas oven at 170 degrees Celsius and cook for 20 minutes.
Remove from the oven and allow to cook completely before gently running a butter knife around the rim of each ramekin to gently dislodge the dessert onto serving plates.
Serve with ice cream and strawberries or even your favourite nut butter ?
