The Best Healthy Nachos You Will Ever Make

Is there such a thing as healthy nachos? Nachos that taste like the real deal but offer a more balanced nutritional profile, not that nachos aren’t balanced 😂. But the answer is yes, healthy vegan nachos are a real thing and we have found the perfect seasoning that makes this dish sing.

We switch out the corn chips for sweet potato chips, and season with a spice mix that does a cracking good job without all the sugar you usually get in a spice blend. We happened to come across Table of Plenty for some of the dukkah mixes they do, but this new Veggie Roasters mix of classic paprika is perfect to give a smokey feel to these healthy nachos.

Simple and easy to roast, and no messing around with countless spices.

Once you have the base done, then you can whip up a healthy topping of beans, corn, avocado and your nachos are finished and ready to be devoured.

  • 4 medium sweet potatoes cut into wedges
  • 1/2 pkt Table of Plenty - Classic Paprika Veggie Roasters
  • 1 1/2 avocados
  • 400 g corn kernels can
  • 400 g black beans can
  • 1 red onion diced
  • 2 tomatoes
  • 1 small bunch of coriander
  • 1 lime
  • 1/2 tsp cumin
  • Salt & Pepper

  1. Preheat the oven to 200°C.

  2. Slice the sweet potatoes into wedges, place in a bowl and drizzle with olive oil. Then sprinkle half the packet of Classic Paprika over and toss to coat.

  3. Place the sweet potatoes on a baking sheet and make sure they are spread out so the potatoes are not touching. Bake for 20-25 minutes until golden brown and cooked through.

  4. While the potatoes cook, drain the corn & black beans, rinse and place into a mixing bowl.

  5. Dice the red onion, avocado, and tomato and place in the same bowl, mixing all the ingredients together. Sprinkle with salt & pepper and cumin.

  6. Remove the potato wedges from the oven and place them onto a platter. Top with the mixed vegetables. Serve with fresh coriander and slices of lime.
