Cheesy Broccoli and Cauliflower Bake

As well as crispy roasted potatoes, my idea of the perfect Christmas side dish is a cheesy
veggie bake. This recipe can be made with either nutritional yeast flakes or your favourite
vegan store bought melt-able cheese. Or both! Go on, it’s Christmas.
This recipe is not only vegan but gluten and onion & garlic free. Safe for most tummy’s!

Cheesy Broccoli and Cauliflower Bake

Ingredients

Vegetables

  • ½ large head broccoli
  • ½ large head cauliflower

Sauce

  • 2 cups full fat soy milk
  • 2 tbsp vegan butter or margarine
  • 2 tbsp cornflour heaped
  • ½ cup nutritional yeast flakes or 1 cup melty vegan cheese + 2 extra tablespoons of ‘nooch’ for topping
  • 1 teaspoon salt
  • cracked black pepper

Instructions

  1. Preheat the oven to 180C.
  2. Cut the vegetables into large florets and parboil in a large pot of simmering water for 5 minutes or until tender. Drain.

  3. Pour the soy milk into a medium saucepan and whisk in the cornflour until dissolved. Add the butter and salt.

  4. Place on the stove over a medium heat and stir often until it becomes thick and glossy.
  5. Add the salt, pepper, cheese or nutritional yeast flakes (or both) and stir until melted. Take off the heat.

  6. Stir the sauce thoroughly through the vegetables and then transfer to a baking dish. Top with the extra 2 tablespoons nutritional yeast flakes/cheese.

  7. Bake in preheated oven for 25 minutes or until the sauce is bubbling and golden brown.
