Vegan Chewy Gingernut Biscuits
- 1 tbsp ground ginger
- 2 cups self-raising flour gluten-free
- 100 grams vegan butter Nuttlex
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1 tsp bicarbonate of soda
- 1/4 cup golden syrup
Preheat the oven to 180°C
In a small saucepan, combine butter, sugar and golden syrup. On low heat, stir to combine the ingredients as they melt.
Add the flour, bicarbonate of soda and ginger into a large mixing bowl, making a well in the centre. Add the melted butter, sugar and golden syrup and stir to combine. It should all come together to form a soft dough.
Roll tablespoons of the mixture into balls, place on the baking tray (lined with baking paper). Flatten them slightly with a fork to create the ridged texture on the top.
Bake for 12-15 minutes, until golden and leave to cool.
