Vegan Chewy Gingernut Biscuits

Ingredients

  • 1 tbsp ground ginger
  • 2 cups self-raising flour gluten-free
  • 100 grams vegan butter Nuttlex
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp bicarbonate of soda
  • 1/4 cup golden syrup

Instructions

  1. Preheat the oven to 180°C

  2. In a small saucepan, combine butter, sugar and golden syrup. On low heat, stir to combine the ingredients as they melt.

  3. Add the flour, bicarbonate of soda and ginger into a large mixing bowl, making a well in the centre. Add the melted butter, sugar and golden syrup and stir to combine. It should all come together to form a soft dough.

  4. Roll tablespoons of the mixture into balls, place on the baking tray (lined with baking paper). Flatten them slightly with a fork to create the ridged texture on the top.

  5. Bake for 12-15 minutes, until golden and leave to cool.
