Mini chocolate lava cakes

Dry ingredients

  • 1 cup oats
  • 1/2 cup shredded coconut
  • 4 tablespoons cacao powder
  • 1/3 cup coconut sugar or regular is fine
  • 1 teaspoon baking powder
  • Pinch of salt
  • Wet ingredients
  • 2/3 cup plant based milk
  • 1 tablespoon apple cider vinegar
  • 1/3 cup Apple sauce or purée
  • 1/4 tsp instant coffee granules


  • 100 ml Go Vegan Desserts chocolate truffle frozen


  1. Add dry ingredients to a food processor and pulse until the oats and coconut are well broken up and you have almost a flour-like consistency.
  2. Add wet ingredients into a small bowl and whisk to combine.
  3. Gently fold the wet ingredients into the dry ingredients and stir until you have a smooth batter, no lumps.
  4. Pour the batter between 4 ramekins and full until 2/3 full.
  5. Divide the go vegan dessert into 4 portions while still frozen and place into the centre of each ramekin. You don’t need to insert it as it will sink during cooking time.
  6. Place ramekins in a preheated gas oven at 170 degrees Celsius and cook for 20 minutes.
  7. Remove from the oven and allow to cook completely before gently running a butter knife around the rim of each ramekin to gently dislodge the dessert onto serving plates.
  8. Serve with ice cream and strawberries or even your favourite nut butter ?
