It can be challenging to find a quality sandwich shop, but luckily for the residents of Brunswick, Rusty’s Sandwich Parlour opened its doors. The new venue from Phil Gijsbers and Rob McKenzie, the pair who also brought you Green Acre Pizza Bar. In a similar fashion, Rusty’s Sandwich Parlour follows the same ethos, with sustainability at the forefront of what they do, together with their dedication to simple flavours that allow the food to speak for itself.
It’s located right on Nicholson St, a short walk from some great parks, and fitted out with secondhand and recycled materials, much like their other locations.
The Food
The sandwiches are loaded here at Rusty’s Sandwich Parlour, and it makes no difference whether they are vegan or not, they are all substantial. Designed by chef Jay Van Rhee, the vegan items are s little out of the ordinary than what you would expect. Think Beetroot Reuben, with warmly sliced beetroot, kraut, vegan mozzarella and a creamy Russian dressing that will soothe your soul and leave you feeling all warm inside. Another to note is the vegan sausage with a generous serve of chilli jam that makes this one not to miss.
There’s also a heavily loaded mushroom sandwich and some very special fries that come topped in vegan sriracha mayo.
